Grilled Vietnamese chicken wings | Recipes - HungryGoWhere

The secret to this grilled chicken, which is really a popular Vietnamese street food, is the time spent marinating the chicken. You need at least two hours, but it’s even better left overnight. The long marination process tenderises the meat and ensures thorough penetration of the spices into the flesh. The lemongrass helps, of course. It looks like lalang (weeds), but with a scented bulbous stem. When buying it, choose one with a fat stem – which will have lots of fragrant juice.
