An easy quick bread: coconut bread

Ingredients 300g all-purpose flour 170g caster sugar 150g shredded unsweetened coconut (I used freshly grated coconut) 2 teaspoons baking powder ½ – 1 teaspoon cinnamon (the original recipe calls for 2 teaspoons which I found it to be overwhelming; if you are not a fan of cinnamon, use ½ teaspoon) 2 large eggs 300ml milk 1 teaspoon vanilla extract 80g unsalted butter, melted Preheat the oven to 180o C. Using a 21cm x 10cm (8.5” x 4”) loaf tin, add in the unsalted butter and place the loaf tin in the oven while it is preheating. In this way, you are not just melting the butter as required, you are also greasing the loaf tin. Once the butter is melted, remove the loaf tin from the oven and set aside.
