First, choose your hairies. They come in male or female (duh) and you can usually choose either gender when you buy them. The “roe” texture is different – I’ve had both and they’re both gorgeous in different ways. I recommend definitely going for the largest size available – larger crab = lots more roe. Obviously, the roe is the best part of the crab (in fact, after the roe, the rest of it is a bit of a letdown for me – I try to extract most of the meat to, well, make the little critter’s life worth it…) Crabs are best consumed on the day you purchase them. Without removing the string that the crabs each come tightly bound in, give them a light but thorough scrub with a brush and water. Prepare the wok.
