Just about every part of the fish goes into a dish, from the liver that is thinly sliced and panfried with bean sprouts, to the tail, best served steamed, Teochew-style with soy sauce, bean paste or minced garlic. Some fans consider the latter the best part of the fish although Heng prefers the spine, which he says is best served steamed to enjoy the natural flavour of the fish, or braised claypot-style. "The giant garoupa has meaty flesh, which will not fall apart when braising," he says. "The meat will take on the seasoning and be very tasty."
