Among the scores of seedy pubs and KTV lounges that dot the shop houses along the Kampong Bahru thoroughfare, Parsley & Thyme is an anomaly. Not least because it is the only restaurant along the nightspot stretch, the European fare on offer is also decidedly wholesome. Dutchman and former F&B Director of Jewel Box, Dennis Kool, hung up his corporate tie in favour of chef’s white and, since August, has been spotted pottering around the tiny kitchen of his red-swathed 30-seater restaurant. Judging by the parade of well-executed pan European classics we had at dinner, it is abundantly clear that Kool’s place is clearly in the kitchen.
