大巴窑大牌127的熟食中心里,有大约5间售卖鱼汤的小贩。而“127(一巷)鱼粥·鱼汤·海鲜汤”是受许多食客欢迎的其中一间。 提起售卖鱼汤的摊贩,多数是潮州人,所售卖的鱼粥则称为“鱼糜”,汤米分明,鱼片立体。除了鱼糜,另一种是以汤下饭,鱼汤所使用的鱼多数为马鲛鱼或鲳鱼,鱼肉口感鲜甜扎实带嚼劲。 “127(一巷)鱼粥·鱼汤·海鲜汤”的鱼汤选用巴淡鱼,其肉甜美,价格合理,而且巴淡鱼为海鱼,它的营养比淡水鱼更胜一筹。 从中国来新加坡20多年的老板李庆明,卖鱼汤已经超过10年。他每天早上5点就开始准备材料,老一辈的食客早上7点多就会到摊位和鱼汤。 经验丰富的李庆明,对食物要求严格,坚持用最新鲜的鱼,而且用来做汤的材料也很讲究,多种材料慢熬2小时,且少味精,汤头的清甜鲜美。 他自豪地说:“我的鱼汤的味道就是也别人的不一样。” “127(一巷)鱼粥·鱼汤·海鲜汤”的汤底非常鲜甜,每片鱼肉都非常新鲜,厚度刚好。加入汤里烹煮时火候适宜,没有腥味。 汤里还加入了小菜心和炸得香脆可口的小江鱼仔,让这碗鱼肉米粉变得更完美。 老板说,有些食客喜欢啃鲳鱼头,一天可以卖超过12个鱼头。如果在繁忙的午餐时间到这里吃鱼头汤,还得等上45分钟! 喜欢吃辣的你,可以选择酸辣汤,酸酸辣辣的感觉,刺激味蕾,简直是回味无穷。 鱼头汤、鱼粥、鱼片汤、海鲜汤,和炸鱼片汤每碗$3、$4、$5;酸辣海鲜汤每碗$3.50。 127(一巷)鱼粥·鱼汤·海鲜汤 Blk 127 Toa Payoh Lorong 1 #02-33 营业时间:早上7时30分至晚上8时30分、星期一休息
