It is a labour of love that is well worth the effort. Masala prawns are definitely easier to eat than to cook. But follow the steps of this family recipe shared by Mrs Priscilla Wilson, an administrative officer in her 40s, and you may find yourself hooked to the art of Indian cooking, as I now am. I've always been enchanted by the myriad flavours in Indian cuisine, but have always thought of masala as a culinary mystery. Mrs Wilson's recipe is a gratifying introduction to South Indian cooking. It is essentially her mother's original recipe, but with one modification. She says: "When I cook, I blend the shallots into a paste so that my daughter will eat it."
