New recipe: Singapore eggs - #lchf version of Singapore breakfast noodles #banting
In Singapore they do a great breakfast dish called Singapore noodles with eggs, some prawns or chicken, and green onions. I created my own low carb version without the noodles, it still tastes just as good though. Ingredients 6 medium size prawns (I use the frozen ones still in the shell) 1 tbsp olive oil 1 tsp spices (I found Singapore noodle spices, but any blend of asian spices should do) 2 eggs 50g spring onions 50g mung beansprouts handful of coriander leaves squeeze of lime juice dash of fish sauce Instructions Put the frozen prawns in warm water to melt them enough to shell them, then chop into pieces about 2cm long. Heat the oil olive in a frying pan, and add the spices and prawns. Fry for 1 to 2 minutes. Beat the eggs and add to the pan with the spring onions, beansprouts and coriander.
