This is to me, the easiest cooking can get. The cooking method is very simple – after seasoning the scallops, drizzle some olive oil, bake 10 minutes in the oven and voila, it’s ready. This was inspired by tigerfish’s oven-baked Spanish-style shrimps which was a love-at-first-sight dish to me. But I have been such a complete sloth in cooking recently that I did not even want to peel the shells and de-vein the prawns, so I adapted the recipe with scallops instead. The result is great. I enjoyed this side dish together with my leftover chicken stew for a complete and fuss-free dinner.
