We snuck into #GardensbytheBay for a video interview with the chefs of #Pollen

Gardens by the Bay opens to the public on 29 June, as does Pollen – the flagship (and only) restaurant in the domes. Led by Esquina chef Jason Atherton, this Mediterranean venture with local hotelier and restaurateur Loh Lik Peng is located in the climate-controlled Flower Dome. A 360-degree view of the interior of the Flower dome Michelin-starred Atherton is the culinary director of this kitchen. The daily operations are led by executive chef Colin Clague (formerly at Zuma in London) and executive pastry chef Andres Lara (formerly at Iggy’s). We pulled the trio from their stations for a preview of Pollen’s menu, their views on farm-to-table restaurants, foraging and the details on the essential dessert bar:
