This soup is great for Singapore’s climate because it soothes the throat and brings down ‘heatiness’. Also, lotus root is packed with vitamin C, potassium, thiamin, riboflavin and vitamin B6, and is rich in dietary fiber. Serves 4 Ingredients: 1.5 litres water 400g chicken meat or spare ribs, cut into 3cm pieces 1 piece dried squid, washed 1 tablespoon chicken stock granules 8-10 red dates, pitted ¼ teaspoon pepper 1 carrot, peeled and cut into wedges 350 g lotus roots, skin peeled and cut at the joints Salt to taste Method: 1. Using a peeler, remove the skin of the lotus roots and slice them into 0.5cm thick pieces. Set aside. 2. Blanch chicken meat or spare-ribs in boiling water. Remove and drain. 3.
