Adapted from the popular Hong Kong dessert, this version infuses pandan flavour and ginger into the papaya milk. Truly a soothing dessert to warm you up on a chilly night. You can also substitute the papaya with steamed pumpkin or sweet potatoes. Serves 6 Ingredients: 3 cups full cream milk 3 tablespoons sugar 2 pandan leaves, knotted 2 slices ginger 400g just ripe and firm papaya, seeded and cut into large chunks Method: 1. Place all the ingredients in a pot and simmer gently (it should not be boiling). 2. Allow to infuse for 20 minutes before dividing and serving hot.
