As with each of his outlets, each bowl comes with unlimited complimentary hard-boiled eggs in a basket, slightly spicy cold beansprouts and grind-them-yourself sesame seeds on the side. Takeda also has a different star ingredient at Ramen Keisuke Tori King: the meat, and cut, of choice at his third-time-charm-er is the grilled chicken thigh. The Japanese-speaking, French-trained chef explains his choice to us (via a translator), leading to his secret to a perfect bowl of ramen:
