Thinking about lunch? Here's a suggestion that won't leave you sluggish #feelgoodfridays

1. In a medium bowl, whisk the oil, lime zest, salt, and black pepper. 2. Add the prawns and toss well to coat. Marinate for one hour. 3. Bring one cup of water to a bare simmer in a medium saucepan. 4. Add 3 tablespoons of the lime juice and the marinated prawns (with its marinade) to the pot. Gently simmer until just cooked, about 1 minute. 5. Strain the prawns from the liquid and set aside to cool (or chill if desired). 6. In a small bowl, stir together the mayonnaise, chopped chilies, salt and remaining tablespoon of lime juice. 7. Spread the chili mayo onto the tortillas. 8. Top each tortilla with a small bunch of the pea shoots, the prawns, and the cucumber. 9. Fold up the bottom end of each tortilla and roll up into a wrap.
