Bak kut teh, or prime pork ribs stewed in a delicate soya sauce and herbal broth, is one of the most popular comfort food amongst Singaporeans. Ours is a simple version, using only one type of Chinese herb. Serves 4 -5 Ingredients: 1½kg prime pork ribs, chopped up into 4-cm lengths 20 cloves garlic, unpeeled 2½ litres water 40g tong kwei (Angelica) ½ -¾ cup light soya sauce 2 teaspoons sugar Coriander leaves for garnish To serve: 2 red chillies, sliced 4 tablespoons thick dark soya sauce Method 1. Wash pork ribs thoroughly, drain to dry for a few minutes. 2. Wash unpeeled garlic well and drain. 3. Boil the water, put in pork ribs and add all the remaining ingredients, using only ½ cup of light soya sauce. Boil over medium-to-low heat till the pork is tender — about 1 to 1½ hours.
