Known as ‘Fish Boy’ for his ties to Japan’s famous Tsukiji fish market, the Aussie-born Alistair Douglas, 41, combined his affection for hawker centres with a desire to introduce quality sashimi at reasonable prices by opening Maguroya – it means ‘tuna shop’ in Japanese – at the sprawling Lau Pa Sat in January this year. Culinary chops? Not a chef, but the next best thing – Douglas holds a PhD in marine biology, is a keen advocate of sustainable seafood and supplies the ocean’s bounty to some of the country’s top restaurants. What to eat Maguroya offers a selection of rice bowls such as the otoro don ($22), kaisen don ($14.50) and salmon don ($8), and a couple of cooked tuna items like the kabuto yaki (tuna head, $15/one, $25, two).
