Cupcakes are not muffins, despite the offerings at many a bakery in Singapore. Generally rich and sweet, cupcakes are a confection of flour, eggs, sugar and fat. Their light, fluffy structure is a result of the flour, starch and egg proteins that hold together layers upon layers of tiny gas bubbles; the sugar and fat – usually butter – interfere with the gluten-forming process to retain that cake-like texture. It’s not uncommon now to find fillings in cupcakes, but fillings mixed into cake batter are rare. Cupcakes are, however, almost always elaborately decorated with toppings like buttercream and cream cheese frosting.
