Gin Jubillee!

‘Small’s gin has a very lush, fragrant and concentrated flavour – all the botanicals are turned up a notch and it punches through a long drink well. I took East Imperial tonic, reduced, salted and caramelised it into a syrup and added a splash of verjus [the juice of unripened grapes] for acidity. I made a clarified starfruit juice to stretch out the concentrate and carbonated the mix with carbon dioxide and nitrous oxide so that the texture is creamy and bubbly, and finished it with a spritz of olive leaf tincture.
