Things are cooked and prepped along with the service, usually until about 2hours before the shop closes. We've to predict when customers will come as well, and to make sure that if we think there're still customers coming that the shopfront has enoughf ood to attract people to buy. You've that experience of a cai png stall where only a few things left, you see also sian then dont' wanna buy cause machiam no options. Yes and no, some things you prep the day before. But mass order from central kitchen only really happens for bigger shops/catering. Different economies of scale here. Whatever is available in the market, but usually if you look closely enough. A lot of dishes are just the same veg and poultry with a different sauce on it. If you alternate your dishes, it's not hard to come up with an extensive menu
