Tetsuya talking

SEVEN of the biggest names in the culinary world gathered in Marina Bay Sands to present their restaurants together on a united front on Wednesday. Some revelled in swagger and thigh-slapping quips. (Mario Batali, here's looking at you). Others took pains to express themselves. And then there was Tetsuya Wakuda: Quietly earnest; exacting yet elegant; cosmopolitan with deeply traditional soul. And that's when you realise the accuracy of that old truism: You can tell a lot about a chef by the food he cooks. It was my second meeting with the Sydney-based Tetsuya. Perhaps it's the innate Japanese manners that make him such a polite enigma to interview. This is a man who's never been less than thoughtful in his answers; whose flashes of humour are as fleeting as they are sincerely amusing to him. For one, who knew that the reserved chef has famous "boyfriends" in Singapore? Eve...
