Demand for exotic crocodile meat has increased, and more are buying it to cook at home

While demand for crocodile meat has risen, that for rival meats like emu, ostrich and kangaroo has suffered because of a supply shortage in exporting countries and strict controls here. But crocodile meat consumption is up, with Long Kuan Hung Crocodile Farm - Singapore's sole supplier - currently selling 2,500kg of the meat a month to local businesses, up from 1,500kg last year. Manager Robin Lee, said it now has 300 customers, including major supermarket chains, restaurants and hawker centres, up from 100 two years ago.
