They somewhat partially cracked the shell before they cook it, then i just use my hand to break them for the flesh, i also use chopsticks and spoon to poke at the hard to reach spot, i don't know if this is the correct way but that was how i did it. Oh and they give use some plain steamed buns to soak up the sauce as well.
