CHEF Jason Dell's interpretation of contemporary antipodean cuisine has been described as fresh and seductive, vibrant yet fuss free. Those familiar with restaurants Graze at Rochester Park (Tel: 6775 9000) and the more recently opened Graze at Martin No. 38 (Tel: 6509 1680) that Dell now helms, might say his cuisine style is essentially built around full-flavoured, unpretentious dishes - the likes of a crispy hand-rolled pork hock with spiced plum. In his 20 years of experience, Dell has been named New Zealand Chef Of The Year, headed the kitchens at the exclusive luxury lodge Blanket Bay in Glenorchy, near Queenstown, for six years, and - for the inspired diner - even has a lauded cookbook, aptly titled Savvy.
