IT IS hard to imagine, with celebrity restaurants now mainstream here, that it was barely two years ago that Singaporeans had to schlep to Hong Kong if we wanted a big-name meal. The latest we visited was Osia at Resorts World Sentosa, which opened about a year ago. The luminary behind the range: Australian Scott Webster. Webster often comes to town to cook, but when he's back home in New South Wales overseeing his three restaurants, Singaporean chef de cuisine Douglas Tay takes the helm. In true Aussie style, this celebrity restaurant isn't like the others. It's more relaxed and, in terms of the food, a little eclectic.
