Place the shallots, chilies and garlic in a food processor and pulse until finely chopped. Add the oil to a wok or large pot over medium-high flame. Add the chopped shallots and chilies and stir fry for about 2 minutes. Add the shrimp paste and continue to stir fry until the vegetables are cooked down and their moisture is reduced somewhat. Stir in the tomato puree, soy sauce, vinegar, tomato paste, sugar and salt. Reduce heat to medium and simmer for 3 or 4 minutes. Add the crab and toss to coat. Cover and simmer for about 10 minutes, or until the crab is cooked through and the shells turn red. Whisk the cornstarch with the 1/2 cup water. and stir into the simmering crab to lightly thicken the sauce. Adjust seasoning to taste.
