I could hardly find the fat below the crackling in this stall's version and the strip of fat in the lean meat was so thin that it posed no oleaginous challenge while chewing a whole piece of cut meat. The meat was well-spiced, tender, succulent near the fat, and boast delicious aromas and tastes of lard and charcoal smoke. Ahhh, the addictive power of roasted pork fat and crackling.
