If you know how to boil water, you are ready to cook this silky smooth chicken. The secret is in the contrast of boiling stock and icy cold-water bath. The cold water stops the cooking immediately and “shrinks” the pores of the chicken, making the skin tight and smooth. Serve the dish with a minced ginger and spring onion dip. Mince equal amounts of young ginger and the white parts of scallions. Scald with a bit of sizzling hot oil and season with salt. Nothing is simpler–or more delicious. Serves 4 Ingredients: 1 chicken (about 1.2 kg) 2 chicken breast fillets (about 500g) 5cm knob ginger 2 stalks spring onions, roots trimmed and knotted Sea salt 3 litres iced water (enough to cover chicken) Method: 1.
