Potato rosti, a popular Swiss dish, is paired with a roasted chicken leg glazed with a homemade teriyaki sauce. Serves 4 Ingredients: 4 large russet potatoes 4 tablespoons ghee (or clarified butter) 4 whole chicken legs 2 tablespoon olive oil 4 tablespoons Japanese mayonnaise Salt and pepper Teriyaki sauce: 1 cup mirin (or Japanese sweet cooking wine) 5 tablespoons Japanese soya sauce Method: 1. Preheat the oven to 180ْC degrees. 2. To make the teriyaki sauce, put the mirin in a saucepan and heat it until it reduces to a thick syrup. Add the soya sauce and mix thoroughly. Reserve. 3. Season the chicken legs with the olive oil, salt and pepper. Roast in the oven for 35 minutes. 4. With 5 minutes left of roasting time, brush the teriyaki sauce on the chicken to caramelise it. 5.
