But you need not slave over the kitchen on the day of the party itself, as most of the preparation may be made ahead of time. The pastry and the filling may be prepared up to three days ahead and kept refrigerated until needed. Serves 6 Ingredients: Pastry: 30g icing sugar, sifted 1/2 egg 125g salted butter 170g plain flour, sifted 1 tablespoon milk powder, sifted Chocolate filling: 125ml fresh milk 125g condensed milk 1-2 tablespoons brown sugar (optional) 1 grade A egg yolk 30g unsweetened cocoa powder, sifted 1 heaped tablespoon corn flour 60g salted butter Meringue : 2 egg whites + 100 g castor sugar Mini pie moulds – 6cm diameter Method: Preheat oven to 180°C.
