Budapest revives its food culture.

Just two months ago, the only Hungarian dish I'd eaten was goulash, a beef and vegetable stew heavily spiced with paprika. And I'd tasted Mangalica (say mangalitza) pork, a juicy and tasty meat known for its high fat content, which some restaurants here use. But that was as far as my knowledge of Hungarian cuisine went. So when the chance came up to visit Budapest in October for a tour of its restaurants, I jumped at it. And it opened my eyes - and tastebuds - to a new gastronomical world. Hungary had been under communist rule and was part of the Soviet bloc since World War II until 1989, when the dissolution of the Soviet Union paved the way for a democratic government. Today, the country is part of the European Union, though it has not adopted the euro as its currency and still uses the Hungarian forint. Little remains of its communist past other than a couple of statues...
