Try this smoked salmon crispy potato skins dish for your next party. These bite sized snacks are not only mess-free but healthier than the usual deep fried snacks. Serves: 4-6 Ingredients: 10 medium russet potatoes Olive oil, salt and pepper 50g smoked salmon, chopped 1/4 teaspoon ground pepper Salt to taste 2 tablespoons butter 1 teaspoon chopped dill Method: 1. Preheat oven to 180ْC. 2. Scrub potatoes; pat dry. Cut each potato into 2. Rub skins with oil. Place potatoes on baking sheet. Bake for 45 minutes to 1 hour or until potatoes are tender. Leave them to cool. 3. Maintain oven temperature. Scoop out centers, leaving 1/2-inch-thick layer of cooked potato on skins. Oil baking sheet.
