Pandan thumbprints

1. Place oven rack in the upper middle and lower middle spots, and preheat the oven to 180°C. Line two baking sheets with parchment paper. 2. Using a mixer on medium speed, mix the butter, sugar and salt until combined and creamy. 3. Mix in yolk and pandan paste until combined. 4. Reduce speed to medium low and mix in the flour until just combined. 5. Roll the dough into scant tablespoon sized balls and place on the baking sheets, spaced about 5cm apart (about 18 to 20 cookies per pan). (If the dough is too soft, chill briefly until it’s firm enough to handle). 6. Press a cherry half into each dough ball. 7. Bake the cookies are they are set but not browned, 10 to 12 minutes, rotating the pans from top to bottom halfway through baking. Cool the cookies on the pans.
