published on Aug 01 2011 - 16:06 You went to work in some of the world’s best French kitchens for more than 10 years – did you initially want to specialise in French cuisine? I spent about one year working at a true authentic French restaurant. The rest of the restaurants I worked at were Pacific Rim Restaurants that specialised in fusion cuisine. I think this is the main reason why it has been easy for me to switch over to modernising Filipino food. I love being able to be innovative while staying true to my origins, especially with the dishes I prepared on my latest TV series Tablescapes 5 . You also worked with Chef Gordon Ramsay. What was that like? Intense! That is probably the only word that clearly describes how it felt like working for him. You’ve just opened your own restaurant – how much of a role does ambience play?
