We were midway through our bento set and only when our third friend arrived did the chef dish out the chutoro. I understand that it was convenient for the chef to deal with all three orders at the same time, but it is customary and tradition that sashimi should be served before the bento. It is really quite un-Japanese and unorthodox to be served according to convenience.
