His culinary passion has won him numerous accolades as a chef. Lesser known, but no less intense, is Andre Chiang's zeal for the environment. During our interview, he speaks at length about the impact of climate change on fish and other produce (even giving a condensed version of how carrots evolved from ancient Egyptian times to the present day). But it is only at the end, when he divulges his restaurant will be closed for five days later this month, that one realises how intent he is to walk the talk.
