The secrets behind Singapore's top barista's perfect cups of coffee

Until two years ago, Ryan Tan, 26, never drank coffee. That changed the day his cousin, Leon Foo, 29, decided to open a cafe and, wanting to keep things in the family, asked Ryan to help find out what it was a barista did. The one-day basic barista course that Ryan went for sparked a love affair with coffee - one that last month propelled him into the league of the world's best brewers of coffee. To prepare for the cafe's opening, Ryan and his cousin went all over Singapore and Australia to get their hands on all the different sorts of coffee they could find. "We were making drinks, experimenting with drinks, going to other cafes to try the drinks, going to Australia and checking out menus," he said. After four months of work, Papa Palheta, a roastery where people can buy fresh coffee beans and sample the coffee, opened in September 2009. Ryan, the eldest of three siblings...
